Chocolate Glossary: Map of Java, Indonesia

Java , Indonesia is located just northwest of Australia and New Guinea.

An island of Indonesia, lying south of Borneo and west of Bali. Java is a prime growing region for cacao beans. Ironically, the majority of the cocoa that comes from Java today is of inferior quality, but this is due to poor post-harvest practices. Much of the genetic pool of cocoa on Java is very old, however, and when the right farmers and plantations are located, the island can yield some fine-quality cocoa.

This glossary would not have been possible without the kind assistance of my good friend Karen Hochman who runs the website: The Nibble. Karen gave us permission to base our chocolate glossary on hers. TheNibble is one of the Internet’s best resources for food articles, reviews, history, and just about anything when it comes to quality food. Please, if you have a few moments, visit my friend Karen’s website and you’ll be amazed at what a valuable resource it is. Thanks for all your help Karen!
