Bulk Chocolate Now Available !

Quite a few chefs and chocolatiers have asked if they can purchase our chocolate in bulk for their creations. Initially, we decided to wait. We were in our first year of production and wanted to ensure that our quality was as high as our standards. Our reviews surely attest to the fact that we achieved this goal. For this reason, we are now offering our chocolate in bulk form to professional chefs and the public alike.

Availability

We expect to run out of chocolate from time to time of each of the varieties we work with. The beans we use often have limited (if not highly limited) availability. Once the beans are gone, they are potentially gone until after the next harvest. Please check with us if long term availability is an issue for you. We may be able to set aside chocolate for your future use.

Our bulk chocolate is only available directly from Amano. There are many reasons for this. The primary one of which is that while we would love to provide our bulk chocolate to resellers, it would force us to raise the prices for bulk chocolate considerably. For this reason, bulk chocolate is exclusively available directly from Amano.

Tempering

Right now, the majority of our bulk chocolate is supplied in the form of untempered chunks. If you intend on using our bulk chocolate for confections, the chocolate will need to be tempered. We have a new tempering machine on order. After it arrives (and assuming it works as we expect), we will begin to supply our chocolate in tempered form.

 

Ocumare - Premium Dark Chocolate, 70% Cacao

On the central coast of Venezuela is a remote valley known as Ocumare de la Costa. Once almost totally inaccessible, the Ocumare region has been known for its superior criollo cacao since at least the early 1700's. We hand selected these beans for their fruity and floral notes that pair well with the rich chocolate flavor. We then carefully roasted them in our antique cacao roaster to enhance their optimal flavor. These are some of the finest cocoa beans we have discovered and from which we have made a chocolate you are sure to enjoy.

Madagascar - Premium Dark Chocolate, 70% Cacao

Madagascar has long been known for producing fine cocoa beans. The beans from Madagascar are primarily of the Trinitario and Criollo varieties. The soil and climate produce beans that are particularly fruity and our Madagascar bar is a fine example of this. This chocolate is perhaps a bit untraditional with its strong fruity flavors that include hints of citrus and berry and shows the wide range of flavors possible in cocoa. It is absolutely delicious and one that you will remember for its incredible flavor.

Cuyagua - Premium Dark Chocolate, 70% Cacao

Limited Edition

If you follow birds in Venezuela in their annual migrations, they flock to a series of cloud-forest covered coastal mountains.  At their base is a small-secluded valley known as Cuyagua -- home to cocoa plantations dating to the early 1700's and some of Venezuela's finest cocoa.  This bar's chocolate is made solely from these highly prized Cuyagua cocoa beans.  They are gently roasted and then stone ground creating an exceptional single origin chocolate we know you will treasure for a long time to come.
