The Food Network is rebroadcasting their special on Amano Chocolate starting on Monday, February 8th. We’re very excited by this as it helps get the word out about American gourmet chocolate.

Since the Unwrapped crew was here we’ve grown quite a bit. You might notice that our bar boxes are slightly different from those original ones. The size of our factory has also tripled. However we’re still making the chocolate exactly the same way. We make it in small batches by hand using antique chocolate making machinery we lovingly restored ourselves.

The biggest change since the show was filmed is that we restored an antique mahogany winnower. (We blogged about the winnower when we first installed it) At the time the show filmed we were using a winnower we’d made from scratch. It worked, but was very slow. We finally disassembled the winnower we built from scratch last summer. The “new” antique wood winnower we are using now is truly a thing of beauty though.

If you’d like to see some newer video of our factory you can see our virtual tours. We have one that covers roasting the cacao beans and one that covers grinding the roasted cacao nibs in our antique melanguers.

The Food Network is rebroadcasting the episode of Unwrapped about Amano Chocolate. So tell your friends if you want to see a virtual tour of our factory.

I should note that they filmed before some of our equipment arrived. So you won’t be able to see our antique mahogany winnower. Instead you’ll see our old handmade winnower. (Yes, we made that rube goldberg contraption ourselves and were very happy to replace it with our current winnower. Our Mahogany winnower is at least ten times as fast.) You also won’t see our antique double granite wheel melangeur which we’re quite proud of.

Just two days ago though the local CBS affiliate filmed here at our factory. So you can see some of our newer antique equipment in their video. They got some nice footage of both our winnower and melangeur.
