Amano on Unwrapped

Unwrapped.jpgThe Food Network is rebroadcasting their special on Amano Chocolate starting on Monday, February 8th. We’re very excited by this as it helps get the word out about American gourmet chocolate.

Since the Unwrapped crew was here we’ve grown quite a bit. You might notice that our bar boxes are slightly different from those original ones. The size of our factory has also tripled. However we’re still making the chocolate exactly the same way. We make it in small batches by hand using antique chocolate making machinery we lovingly restored ourselves.

The biggest change since the show was filmed is that we restored an antique mahogany winnower. (We blogged about the winnower when we first installed it) At the time the show filmed we were using a winnower we’d made from scratch. It worked, but was very slow. We finally disassembled the winnower we built from scratch last summer. The “new” antique wood winnower we are using now is truly a thing of beauty though.
